One person, one kitchen, one round.
Maison Miche is a home bakery in Crystal Falls, Leander, run by one baker under the Texas cottage food exemption. Everything is mixed, shaped and baked by hand in small numbers, which is why the round is one subdivision and the carte is three doughs rather than thirty.
Why the bread is like this
A wet dough, long fermentation, a very hot oven and no shortcuts on colour. Loaves cool completely before they are bagged, so they arrive crisp instead of sweating in plastic.
The bag
Bread comes in a linen bag, not plastic. Leave the empty one out on delivery morning and it goes back for the next week. The bag belongs to the house, not to the loaf.
Provence, by way of Leander
The blue and yellow are borrowed from tin-glazed faïence — the everyday ceramic of southern France. The rings in the mark are the flour lines a proofing basket presses into a crust.
